Here is a healthier version of an old favorite holiday recipe that simply tastes great!
Crust ingredients:
1 1/2 cups of crushed graham crackers
5 tbls of real melted butter
Mix the graham crackers with the butter until crumbly and throughly mixed together. Pat the mixture into a springform pan over the bottom and up half of the sides. Bake in the oven at 350 degrees for five to seven minutes.
Cheesecake ingredients:
3 packages of cream cheese softened
1 tsp of vanilla
3/4 cup of sucanat (in the healthy section of the grocery store)
1 can of pumpkin
3 eggs
1/2 tsp of cinnamon
1/4 tsp of nutmeg
1/4 tsp of allspice
In a large bowl mix the creem cheese, vanilla, and sucanat until very smooth and creamy. Add all of the other ingredients and mix well again. Pour onto the baked crust and bake for 60-70 minutes. The top will become a bit darker when baked. Cool to room temp then refrigerate or freeze. Enjoy!!
